I often use this as an opportunity to practice seeing auras. I have noticed that the top of the head is always of a differant color than around the shoulders. Is my observation correct?

Yes it is correct. The more intellectually active the person, the stronger the Aura above the head.

I have found that I can easily see the different colours associated with the cross exercise and have found some weird effects after staring at them for periods of more than 10 mins (I do however find it very difficult not to blink). However, when I try the same technique on people I find that generally they are always moving and the background changes a lot. Consequently I find it very difficult to observe the colour but can always see a whiteish glow around the head. Will practice improve my technique or is it only possible to observe objects that are stationary and are in front of a suitable background?

Practice makes perfect. The more you train swimming, the better swimmer you become. Eventually you will encounter some limit which may be quite difficult to overcome.
Same applies to Aura. Initially we can make significant progress quite quickly. What is eventually possible depends on our individual abilities and our effort. Try to learn from children.
